Full Fat Milk
Always use full fat milk when making lattes and cappuccinos. This helps with the flavour and texture, skimmed milk will not do this. In fact if you use skimmed milk you are just watering down the coffee. Most whole milks actually only contain 3.25-4% fat but this is good as it neither contains too much or too little for a great latte.
Straus Milk
You can buy special organic barista milk called ‘Straus milk’. This is an organic cream top milk that has been lightly homogenised. The homogenisation helps its stability on the coffee and it has sweet well rounded taste.
